
九道箍,煙臺海鮮市場上個頭兒最小的魚類之一,小者只有四五厘米,最大的不過八九厘米。因為小小的身軀從頭至尾長著九道金黃色的斑紋,人稱“九道箍”。
九道箍其實是有大號的,名叫“梅童魚”,是鱸形目石首魚科,與我們熟悉的小黃花魚是近親。梅童魚還有許多別稱,如“梅子魚”“大棘頭”“大頭寶”等,九道箍是其中之一。梅童魚在黃海、東海皆有分布,但以東海多產(chǎn)。
有資料記載,梅童魚因在梅雨季節(jié)洄游產(chǎn)卵繁殖而得名。早在1700多年前成書的《臨海水土異物志》即有:“石首小者名躇水,即梅魚也,頭大于身,人呼為梅大頭。”后來的《臺州府志》對梅童魚做了進一步描述:“似石首而小,黃金色,味頗佳,頭大于身,人呼為‘梅大頭’。出四明梅山洋,故名‘梅魚’。或云:梅熟魚來,故名。”至于叫它“梅童”,可能是因為它身體嬌小,形似大頭娃娃、童稚可愛的緣故。
別看九道箍個頭小,正應了那句話:“濃縮的都是精華。”九道箍沒有修長的身軀,沒有亮麗的色彩,頭大身子小,可食的部分并不多,不熟悉它的人對其不屑一顧,但是九道箍富含蛋白質(zhì)、礦物質(zhì)和維生素,對人體補益多多。九道箍和小黃花魚的肉都呈蒜瓣狀,相比而言,九道箍比小黃花肉質(zhì)更細嫩,有一種入口即化的感覺,味道也更鮮美,那種鮮嫩的滋味沁人心脾,入口難忘。
在浙江臺州一帶還有一種說法,兒童吃梅童魚能夠促進大腦發(fā)育。因此九道箍在這里格外受寵,是嬰兒第一次開葷的理想食物。家人用筷子細心剔去魚刺,并剝落如瓊脂般細膩的瓣瓣魚肉,蘸一蘸魚湯,送到寶寶的嘴里,讓寶寶抿下。這里的女人坐月子,吃的海鮮里也常有梅童魚,據(jù)說有催乳的效果。
九道箍肉嫩刺軟,味道鮮美,可清蒸、可紅燒、可酥炸,在膠東沿海,更多的是制作肉餡,包餃子,汆魚丸。從市場選購新鮮的九道箍清理干凈,剁成魚泥(現(xiàn)在市場上有許多加工魚餡的攤位,直接送去,付加工費即可拎得魚餡歸),然后加少許輔料攪打上筋,最后撒少許韭菜末拌勻待用。魚餡攪好后,可包魚餡水餃,亦可汆魚丸子。水餃需水開后下鍋,水再開(俗稱一個滾兒),餃子即可出鍋。汆魚丸子需溫水下鍋,水開了,白白嫩嫩的魚丸就浮上了水面。無論是水餃還是魚丸,都無須掩腥、無須提鮮,在九道箍面前,雞精、味素之類的調(diào)味品都黯然失色。只要你吃過一次,一定會入口難忘,大呼鮮美。
俗話說,人不可貌相,海水不可斗量。魚也一樣,九道箍就是一例。

Jiudaogu, one of the smallest fishes in the seafood mar-ket in Yantai, is as long as four to five centimeters for a small one and eight to nine centimeters for a big one. Since its small body has nine golden stripes from its head to its tail, it is called Jiudaogu (signifying nine hoops).
Jiudaogu, officially named Meitong Fish (spinyhead croaker), belongs to the Sciaenidae family of the Perciformes order. It is closely related to the small yellow croaker. Meitong Fish is also called Meizi Fish, Dajitou, Datoubao and so on. Jiudaogu is one of its names. Meitong Fish spreads in the Yellow Sea and the East Sea, but it mainly grows in the East Sea.
It was recorded in files that Meitong Fish derives its name from the Plum Rain Season, when it migrates to lay eggs and procreate.
