摘 要:本文對(duì)食品加工企業(yè)質(zhì)量風(fēng)險(xiǎn)突發(fā)事件的認(rèn)知行為和認(rèn)知過(guò)程進(jìn)行了研究。在對(duì)食品質(zhì)量風(fēng)險(xiǎn)突發(fā)事件的含義和特征分析基礎(chǔ)之上,將食品加工企業(yè)質(zhì)量風(fēng)險(xiǎn)突發(fā)事件對(duì)決策者個(gè)體認(rèn)知的影響分為直接影響和間接影響,直接影響源于情緒波動(dòng);間接影響源于情境壓力、社會(huì)網(wǎng)絡(luò)、信息媒介。對(duì)直接影響采用數(shù)理描述揭露本質(zhì);對(duì)間接影響基于對(duì)影響來(lái)源的分析,采用結(jié)構(gòu)方程模型驗(yàn)證突發(fā)事件對(duì)決策者個(gè)體認(rèn)知的影響結(jié)果并確定各因素的重要性,為通過(guò)控制影響因素改變認(rèn)知行為提供理論基礎(chǔ)。

Study on Cognition of Quality Emergency in Food Processing Enterprises

Abstract:This paper does the fundamental research of cognitive behavior and cognitive process in quality emergencies of food processing enterprises innovatively. The influences that emergencies have on personal cognition of decision-makers are divided into two parts-direct influences and indirect influences based on insight into the meaning and characteristics of food quality emergencies in food processing enterprises. Direct impacts come from mood swings while the indirect ones are caused by situational stress, social network and media. Mathematical description is used to study individual cognitive changes with direct impacts to uncover its nature. After analysis on indirect impact source, Structural Equation Model is used on the verification on consequences of emergency ’s affecting individual cognition, the importance of each factor are determined as well to provide theoretical base for changing cognitive behavior through control of factors.

1 引言
食品安全是當(dāng)今世界各國(guó)最重要的公共衛(wèi)生問(wèn)題之一,關(guān)系到公眾利益和社會(huì)安定。隨著我國(guó)改革開(kāi)放的不斷深入和社會(huì)的不斷進(jìn)步,目前我國(guó)食品安全面臨著前所未有的挑戰(zhàn),尤其近年來(lái)頻繁發(fā)生的食品質(zhì)量風(fēng)險(xiǎn)突發(fā)事件不但考驗(yàn)著政府的監(jiān)管能力,還考驗(yàn)著企業(yè)的社會(huì)責(zé)任感和社會(huì)的應(yīng)對(duì)能力。
目前國(guó)內(nèi)外對(duì)食品質(zhì)量風(fēng)險(xiǎn)突發(fā)事件的認(rèn)知主要集中于公眾相應(yīng)和媒體相應(yīng)的研究。由于企業(yè)食品質(zhì)量安全所涉及的主體對(duì)象是人,從心理學(xué)角度去研究危機(jī)的成因不僅可以揭示出其實(shí)質(zhì),而且心理學(xué)的理論也使危機(jī)對(duì)策的制定更加有的放矢。食品安全問(wèn)題涉及的主體有消費(fèi)者、公眾、媒體,各主體對(duì)食品安全問(wèn)題有不同的心理反應(yīng)。……
