摘 要: 以巨峰葡萄、藍莓和冬棗果實作為對照,對比分析黑果腺肋花楸果實的營養價值。對4種果實的可滴定酸、可溶性糖、可溶性蛋白、維生素C、黃酮和花青素含量進行測定分析。結果表明:黑果腺肋花楸果實的可溶性糖含量最低,為7.708 1%,其極顯著低于其他3種果實;可滴定酸、可溶性蛋白含量、維生素C含量、黃酮、花青素含量均最高,分別為2.221 6%、2.256 9%、12.112 0%、2.249 8%和4.128 1%,極顯著大于其他3種果實。綜上,黑果腺肋花楸果實營養價值豐富,有一定的開發價值。

Comparative Analysis on Nutritional Quality of Aronia melanocarpa and Several Fruits

Abstract: The nutritive value of the fruit of kyoho, blueberry and jujube was compared and analyzed with Aronia melanocarpa. The contents of titratable acid, soluble sugar, soluble protein, VC, flavone and anthocyanin in four kinds of fruits were determined and analyzed. The results showed that the content of soluble sugar was the lowest (7.708 1%) in the fruit of Aronia melanocarpa, which was significantly lower than that of the other three fruits. The contents of titratable acid, soluble protein, VC, flavone and anthocyanin were the highest, which were 2.221 6%, 2.256 9%, 12.112 0%, 2.249 8% and 4.128 1% respectively, which were significantly higher than those of the other three fruits. In conclusion, the fruit of Aronia melanocarpa is rich in nutritional value and has certain development value.

黑果腺肋花楸(Aronia meLanocarpa),又稱野櫻莓、不老莓,薔薇科。原產地為北美的東部,后被前蘇聯及歐洲引入。我國對黑果腺肋花楸的研究利用起步于20世紀80年代末,起先由遼寧省干旱地區造林研究所從朝鮮引進栽培。隨后在遼寧、吉林、黑龍江等省(直轄市)均有栽培。黑果腺肋花楸適應性強、經濟價值高、生態效益突出,富含多種營養物質,具有增強人體免疫力,抗氧化、抗癌、抗病毒等功效[1]。藍莓屬于杜鵑花科,越橘屬,是營養價值相對較高的小漿果果樹[2]。藍莓鮮果中含有蛋白質、碳水化合物、維生素C、熊果甙、花青甙、黃酮類等多種營養物質[3]。具有很高的營養價值和保健功能,在改善亞健康狀況和解決人類現代疾病方面具有獨特功效,被聯合國糧農組織列為人類五大健康食品之一[4]。巨峰葡萄是生產中的主栽品種之一, 適應性強,抗病、抗寒性能好。果皮厚,果粉多,果肉較軟、味甜、多汁,富含多種維生素及礦物質[5]。……
