摘 要: 漾濞縣為了更好地生產(chǎn)出“無害、安全、綠色”的核桃,對不同烘干方式下的核桃果品質(zhì)及安全性進(jìn)行了分析與評價。結(jié)果表明,在這4種烘烤方式下核桃仁的脂肪含量由高到低分別是煙熏果、煤熏果、水洗果和無煙果;核桃仁中重金屬元素鉛、鎘、汞和黃曲霉毒素B1的含量都遠(yuǎn)低于食品衛(wèi)生標(biāo)準(zhǔn)限量總體處于安全水平;酸價和過氧化值是反映油脂和高油脂含量食品品質(zhì)的重要指標(biāo),而無煙果的酸價要高于其他三種,煤熏果的過氧化值高于其他三種,均符合 NY/T 1042-2014標(biāo)準(zhǔn)要求,具有無毒、無害和食用安全的特點。

Abstract: In order to better produce "harmless, safe and green" walnut, Yangbi county has analyzed and evaluated the quality and safety of walnut under different drying methods. The results show that the fat content in these 4 kinds of curing conditions of walnut from high to low is smoked smoked fruit, fruit, fruit and coal washing smokeless fruit; the content of heavy metals in walnut kernel of lead, cadmium and mercury aflatoxin B1 are far lower than the limit of food hygienic standard in the overall security level; the acid value and peroxide value is an important indicator of fat and high fat content of food quality, but the acid value is higher than that of other smokeless fruit three, peroxide value of coal smoked fruit is higher than the other three, are in line with the requirements of NY/T 1042-2014 standard, which is non-toxic, harmless and safe characteristics.

21世紀(jì),人們的溫飽問題都已經(jīng)基本解決,在這個物質(zhì)橫飛的年代人們對事物有了更高的追求,比如食品安全問題,正所謂“民以食為天,食以安為先”,食品是人類賴以生存和發(fā)展的最基本的物質(zhì)條件。在中國國民經(jīng)濟中,食品工業(yè)已成為第一大產(chǎn)業(yè)。食品安全問題是關(guān)系人民健康和國計民生的重大問題。因此,生產(chǎn)“無害、安全、綠色”的優(yōu)質(zhì)食品已經(jīng)成為堅果業(yè)可持續(xù)發(fā)展的必然趨勢。核桃是漾濞縣的主導(dǎo)產(chǎn)業(yè),歷史源遠(yuǎn)流長,與各族人民的生活息息相關(guān),截止2015年12月,全縣種植面積達(dá)713萬hm2,其中掛果面積48萬hm2,年產(chǎn)量近438萬t,產(chǎn)值近895億元。2016 年以來,筆者在漾濞縣對不同烘烤模式下漾濞核桃的安全衛(wèi)生品質(zhì)進(jìn)行了調(diào)查和研究,分析了漾濞核桃安全衛(wèi)生品質(zhì)的基本情況,為以后指導(dǎo)漾濞核桃綠色食品生產(chǎn)與開發(fā)做鋪墊。……
