DDGS的營養價值及在豬和雞生產中的應用

干酒糟及其可溶物(DDGS)是生產乙醇的副產物,雖然DDGS含有生物活性物質,但其大量的使用還是僅限于動物生產。DDGS最先用于反芻動物的生產中,近年來也有很多報道將DDGS用于豬、雞等單胃動物生產中。文章綜述了DDGS的生產工藝、營養成分、在豬和雞生產中的應用現狀,重點闡述了飼喂DDGS并添加酶制劑對豬和雞生產性能的影響。

干酒糟及其可溶物(DDGS)是釀酒廠中以玉米、大米、大麥、小麥、高粱等谷物為原料經過酒曲發酵和蒸餾提取乙醇后的副產物。隨著燃料乙醇廠數量的增多、規模的擴大及加工工藝的改進,其加工副產品DDGS的產量也迅速增加,我國DDGS的產量巨大。DDGS最先用于反芻動物生產中,近年來研究發現,從乙醇廠獲得的DDGS,對單胃動物也是具有良好營養價值的飼料原料[1]。而且由于豆粕等蛋白質飼料的價格不斷上漲,采用高水平DDGS作為蛋白質來源具有一定的經濟效益。DDGS將越來越多的用于飼喂單胃動物。因此,需要對DDGS的品質進行更細致的研究,促進其在單胃動物生產中的應用,提高其利用率。因此,本文回顧和探討近年來對DDGS營養價值及其在豬和雞生產中的應用現狀。
發酵、蒸餾酒精后的糟液(固含量10%),經臥式螺旋離心機進行固體、液體分離,分離出的固體成分稱為濾餅或濕渣(固含量30%~40%);而分離出的液體成分(固含量3%,俗稱為黃水);分離出的液體成分少部分回流入發酵系統重新利用,而大部分則進入濃縮器生成濃縮液(固含量30%,俗稱為濃漿)。濕渣比較松散,可單獨烘干,烘干后的產物稱為DDG;而濃漿由于是很黏稠的物質,單獨烘干比較困難,因此生產中將濃漿混入濕渣中一并進行烘干,生成的產物即為DDGS。蒸餾后的酒精糟液含有纖維、蛋白質、脂肪/油、水、酵母細胞、乙酸和乳酸、丙三醇及礦物質等營養成分。在烘干過程中,一些易揮發的營養成分會損失一部分;而另一些營養物質的營養價值(如蛋白質)也會由于溫度過高而降低。但DDGS易保存、運輸、使用方便,因此為廣大酒糟生產企業所廣泛采用。
在以谷物或混合谷物為原料發酵制取乙醇的過程中,淀粉被轉化成乙醇和二氧化碳,其他營養成分如蛋白質、脂肪、纖維等均留在酒糟中,干燥后,剩余的營養物質在DDGS中被濃縮了2~3倍,同時在發酵過程中,由于微生物的作用,酒糟中的蛋白質、B族維生素及氨基酸含量均比原料有所增加[2]。
2.1 蛋白質
DDGS的蛋白質含量受乙醇生產工藝、谷物種類及DDGS的加工處理等因素影響,含量并不一致[3]。但DDGS蛋白質含量較高,是原料的3倍多,一些優質的DDGS蛋白質含量接近豆粕,蛋白質中氨基酸的組成也比較合理,除賴氨酸相對缺乏外,其余的氨基酸含量較高。因此,在畜禽生產中,為了降低成本可以用DDGS部分代替豆粕等蛋白質飼料[4]。
2.2 脂肪
DDGS中含有較高的粗脂肪,含量平均可以達到干物質的10%,且維生素E含量與粗脂肪含量呈正相關[5]。DDGS的脂肪酸組成多為不飽和脂肪酸,在生產過程中容易發生氧化導致其過氧化值過高。
2.3 纖維
DDGS含有很多不溶性纖維,明顯高于原材料。根據纖維素生物質的組成分析,玉米DDGS含有相當大量的非淀粉多糖,即26.5%的總非淀粉多糖(3.55%的可溶性和23.5%不溶NSP),21.5%阿拉伯木聚糖和0.32%β-葡聚糖。黑麥DDGS的NSP水平較高,總NSP達29.0%(4.65%的可溶物和24.4%不溶物),23.3%的阿拉伯木聚糖和1.17%β-葡聚糖[6-7]。單胃動物的腸道微生物可以發酵部分NSP。然而,豬和雞難以利用其能量,NSP作為抗營養因子,影響其他營養物質的消化率,對幼年動物影響更大。要降解這些纖維,需要很多酶的協同作用。
2.4 磷
DDGS是家禽和豬的良好磷源,磷的含量高于豆粕,是原料磷含量的近3倍,但多為植酸磷,利用率較低[8]。
3.1 仔豬
DDGS已廣泛用于養豬產業,從谷物中提取乙醇除去了大部分碳水化合物,增加了DDGS中纖維、蛋白質和脂質的含量。幼豬的胃腸道缺乏消化纖維所需的酶,在早期保育階段飼喂豬低濃度DDGS日糧,可以使其適應DDGS,在保育階段后期可以添加更大濃度的DDGS。仔豬斷奶后立即喂養DDGS 15%不影響生長性能和飼料利用率,在保育期后期添加高達30%DDGS也不影響仔豬的生長性能[9-10]。當日糧中DDGS添加量過大降低了采食量和日增重,仔豬生長性能顯著降低[11-12]。
由于其缺乏特異性消化酶,豬不能消化DDGS中的纖維,已采用添加各種糖酶用于改善飼料利用和降低體重增加的成本。當斷奶仔豬飼喂過高水平DDGS日糧時添加混合酶(木聚糖酶、β-葡聚糖酶、戊聚糖酶、半纖維素酶和果膠酶),研究表明,添加混合酶改善了仔豬的生長性能,養分消化率,飼料利用率更高[13-14]。DDGS已經用溶劑提油處理過,或仔豬己經足夠大(11 kg),則飼喂30%的玉米DDGS不會影響其生產性能。含硫高的DDGS能增加斷奶8周閹公豬血清中α-生育酚的含量,即高含硫的DDGS可能保護了仔豬免受高度氧化的DDGS的損傷[15]。
3.2 生長肥育豬
生長肥育豬飼喂含DDGS 15%~30%日糧對其日增重、采食量和料重比、屠宰性能、肉品質無不良影響,但可降低飼料成本[16]。然而,有報道飼喂生長肥育豬的飼料中包含DDGS高達30%,隨著DDGS濃度的增加,豬的生長性能下降[17]。這些相互矛盾的研究結果可能是使用了不同品質的DDGS。研究表明,在生長肥育日糧中添加25%的DDGS對豬的生產性能和胴體特性沒有不利影響。
添加外源酶可以提高含有DDGS日糧的營養物質消化率。例如木聚糖酶和β-葡聚糖酶的混合可以改善含有DDGS的低能量日糧的干物質(DM),GE和氮(N)表觀總消化率[18]。由于不同性別之間的采食量差異,改善消化率體現在55 kg體重的后備母豬生長性能顯著增加,但在去勢公豬中并不顯著。
由于不同DDGS的品質和營養成分不同造成最適DDGS添加量不同,但日糧中DDGS含量過高對生長豬腸道健康、生長性能、屠宰性能都有負面影響[19-22]。日糧中DDGS添加水平達30%~50%會降低DM、脂肪、GE、酸性洗滌纖維(ADF)、中性洗滌纖維(NDF)、鋅、鈣、磷的糞便表觀消化率[23]。日糧中添加30%的混合小麥DDGS和玉米DDGS降低了屠宰率和增加了內臟器官重量,但添加糖酶復合物(包括纖維素酶、淀粉酶、轉化酶、β-甘露聚糖酶、半乳聚糖酶和蛋白酶)與飼喂玉米-豆粕型飼料的屠宰率和內臟器官的質量差異不顯著[24]。NSP-酶對營養物質消化率不同,但是這些酶制劑都有效的改善動物的生長性能[25]。高水平的DDGS日糧添加NSP-水解酶改善了生長肥育豬的生長性能,提高了DM、N和能量回腸消化率[26-28]。飼喂43.7%wDDGS和cDDGS日糧添加植酸酶改善了磷的消化率[20-21]。
大多數豬肉提供給消費者的是加工過的產品(香腸、罐頭、肉類等),而不是作為新鮮肉類。由于這個原因,必須考慮肉類加工和儲存時的重要特征,如保水力和氧化穩定性。在肉類品質特征中,顏色可能是影響消費者的最重要的特征。DDGS日糧飼喂豬的特點是減少肉的保水力和硬度,而添加酶制劑有所改善并且瘦肉率稍高和最長肌較大(9%)[29]。NSP-水解酶對肉的酸性、化學成分、顏色、持水能力或TBA-RS指數無顯著影響[30]。在生長肥育豬的DDGS日糧中添加酶制劑效果不一致,可能由于受到實驗動物年齡、酶的添加水平(活性)、試驗日糧的營養水平、日糧中DDGS的含量等因素影響。
3.3 母豬
用25%的玉米DDGS完全替代豆粕,飼喂妊娠期母豬對子代斷奶仔豬日增重、料重比和采食量均無顯著影響[31]。哺乳期飼喂高達30%DDGS的飼料對母豬或產仔性能沒有產生不利影響[32]。研究表明,母豬飼喂DDGS日糧中添加植酸酶,在生產性能上沒有顯著差異(P>0.05),但植酸酶對磷的利用產生有益的影響,體現在糞便中植酸磷的濃度降低[33]。
在雞日糧中添加DDGS可以為其提供較好的能量和氨基酸來源,還可提供較高的有效磷。
4.1 肉雞
飼喂肉雞10%DDGS對于生長性能、腸道形態沒有不良影響,同時提高皮膚黃度[34-35]。添加植酸酶可以提高干物質和氮的消化率[36]。添加混合酶(糖酶、植酸酶、蛋白酶活性)可顯著改善肉雞的FCR和降低食糜黏度[37]。當飼喂DDGS 20%時會顯著降低肉雞的生長性能,添加木聚糖酶改善了生長性能,提高了DM、CP和半纖維素的消化率[38-41]。添加30%的高粱DDGS有較差的飼料轉化率(FCR),蛋白質和氨基酸消化率也較差,而添加蛋白酶和木聚糖酶可顯著改善FCR,木聚糖酶降低回腸中不溶性NSP含量,改善了雞FCR,添加植酸酶改善了雞的磷的消化率和骨礦化。添加木聚糖酶(結合植酸酶)可改善肉雞的生產性能,提高DM和OM的消化率,Ca和P的保留量以及股骨質量[42]。
4.2 蛋雞
飼喂含DDGS 10%~15%的日糧替代豆粕對蛋雞的生產性能無顯著影響,但可改善了蛋黃的黃度,同時產蛋雞中蛋黃的黃體素和玉米黃質濃度增加[43]。DDGS 20%對蛋雞的產蛋率、采食量、飼料轉化率沒有不良影響,但蛋重略有下降,產蛋總重降低[44]。添加糖酶,改善了產蛋量,降低了P和N在排泄物中的濃度[45-47]。
DDGS飼料不僅含有豐富的蛋白質,而且含有豐富的氨基酸、維生素和有利于動物生長的多種礦物質,適合飼喂家禽、家畜、水產及特種動物。然而使用DDGS也存在營養成分含量變異較大,質量不穩定;纖維含量高,消化利用率較低等限制性因素。使用酶制劑可以提高豬和雞對DDGS的消化利用率和克服DDGS質量不穩定性的問題。我國現階段對DDGS營養成分及其特性的研究還較少,基本都是參考國外的資料。為了提高DDGS作為飼料的利用價值以及為了精確配制各種家畜平衡日糧,有必要對我國DDGS營養特性進行深入研究,并將其應用于各類家畜中進行大規模的生產試驗,以便精確地評定DDGS的營養價值和確定不同動物對DDGS飼料的適宜添加量以及添加時需要注意的問題,從而指導生產實踐,推動DDGS飼料在我國畜牧業中的廣泛應用。

Dried distillers grains with solubles(DDGS)is a by-product of ethanol production.Although DDGS could produce bioactive substances and still used in the animal production.DDGS was first used in the production of ruminants.In recent years,there have been many reports on the application of DDGS in the production of single stom?ach animals such as pigs and chickens.In this paper,the production technology,nutrient composition and application status of DDGS were summarized.The effects of feeding DDGS and enzyme perparation on the production performance ofpigsandchickenswerediscussed.
