摘 要:食品理化檢驗是一種有效的檢驗食品安全性的方法,加強對食品理化檢驗環節的質量控制,有利于提升食品檢驗準確度,提升檢驗效果。食品檢驗結果易受檢驗環境、操作流程、分析方式等相關因素的制約,稍有疏忽就會使檢驗結果產生偏差,在實際操作中,要從各個方面加強質量控制,保證食品檢驗結果的準確性。本文分析了食品理化檢驗質量控制現狀及意義,并對其質量控制要點做了詳細分析,希望能為食品檢驗工作提供理論支持。

Abstract:Food physical and chemical inspection is an effective method to inspect food safety. Strengthening the quality control of food physical and chemical inspection is conducive to improving the accuracy of food inspection and improving the inspection effect. The food inspection results are restricted by the inspection environment, operation process, analysis method and other related factors. If there is any negligence, the inspection results will have deviation. Therefore, in the actual operation, we should strengthen the quality control from all aspects to ensure the accuracy of the food inspection results. This paper analyzes the definition, status and significance of food physical and chemical inspection quality control, and makes a detailed analysis of its quality control points, hoping to provide theoretical support for food inspection.

1 食品理化檢驗技術質量管控現狀
化工、印染等制造業的發展,破壞了飲水安全,影響了生態平衡。近年來,由不法加工引發的食品安全問題頻繁出現,食品安全問題也越來越受到人們的關注。食品理化檢驗就是運用相關的理化手段及儀器對食品進行檢驗,獲取食品內元素含量信息,按照食品安全相關標準判斷食品的安全性,把好食品質量關,為廣大群眾的健康安全負責。食品理化檢驗是一份細致的工作,需要工作人員在遵守各項規范的基礎上,對實驗環境、儀器設備、檢測方法與采樣過程等環節加強質量控制,確保檢測結果的準確性[1]。……
