食品安全供應鏈研究

摘 要：食品安全問題不僅關系到群眾的飲食安全和身體健康，更與社會的穩定和人民群眾對我國食品產業的信心有關。本文首先介紹了美國食品安全問題的解決辦法，然后指出了我國食品安全供應鏈的發展現狀，最后針對食品安全供應鏈問題提出了對策與建議：（1）建立食品供應鏈的安全通道；（2）完善食品檢驗檢測體系、推廣HACCP制度和完善食品安全風險評估體系；（3）建立健全各類法律法規，完善監管機構的法律地位。

Abstract： Food safety was not only related to the food safety and health of the masses， but also with social stability and people's confidence in the food industry in our country. This paper first introduced the solution of food safety problems in the United States， and then pointed out the development situation of food safety supply chain in China， finally put forward the countermeasures and suggestions for food safety supply chain problem.（1）Establish secure channel for food supply chain.（2）Improve the food inspection detection system， promotion of HACCP system and improve the food safety risk assessment system.（3）Establish and improve various rules and regulations， perfecting the legal status of regulatory agencies.

隨著生活水平的日益提高，人們對怎樣能夠吃到安全放心的食品越來越關心。然而，各種各樣的食品安全事件的不斷發生，使得老百姓深惡痛絕。近期曝光的 “蘇丹紅”、“瘦肉精”、“地溝油”、黃曲霉毒素M1超標、三聚氰胺事件、老酸奶明膠等食品安全問題給中國的食品企業嚴重打擊。這些問題不是突然發生，而是長期滋生的，甚至已經形成了具有一定規模的產業鏈條。這些產品能夠在市場上長期存在，與監管的長期不到位有相當大的關系。食品安全問題不僅關系到群眾的飲食安全和身體健康，更與社會的穩定和人民群眾對我國食品產業的信心有關。在重創后我們應該如何建立更加完善的食品安全監管機制，如何建立良性循環的供應鏈，積極避免同類現象的再次發生，重塑我國食品企業和監管部門的社會形象，使老百姓對國內食品行業重拾信心，是我們現在急需解決的一個問題。……
